Romana bread salad with Bergader Edelpilz

Ingredients:
Salad
| 100g | of white baguette bread |
| 3 | tablespoons of olive oil |
| 2 | unpeeled garlic cloves |
| 200g | cherry tomatoes |
| 1/2 | cucumber |
| 1/2 | romana, iceberg or cabbage lettuce |
| 150g | Bergader Edelpilz |
Dressing
| 1 | small onion |
| 4 | tablespoons of mild olive oil |
| 60ml | vegetable stock |
| 1 | tablespoon of red wine vinegar |
| 2 | tablespoons of balsamic vinegar |
| 1/2 | teaspoon of strong mustard |
| 1/2 | teaspoon of honey |
| 1 to 2 | tablespoons of freshly cut basil leaves |
| salt and pepper from a mill | |
| 1 | pinch of powdered sugar |
| fresh basil leaves to serve |
Preparation:
Salad
Cut the white baguette bread obliquely into thin slices. Heat the olive oil gently in a frying pan, fry the slices of white bread in it with an unpeeled clove of garlic on both sides until crispy and then allow them to dry on kitchen paper.
Wash the cherry tomatoes and cut them in half. Peel the cucumber, cut it in half longitudinally, remove the seeds with a spoon and cut into half-moon shapes. Take apart the Romana salad, wash it thoroughly and allow to dry. Crumble the cheese into pieces the size of hazelnuts.
Dressing
Peel the onions and dice them into small pieces. Brown them in a frying pan with 1 tablespoon of olive oil at a mild heat, then remove from the cooker. Pour in the vegetable stock, add the red wine vinegar, balsamic vinegar, mustard and honey, then stir in the remaining oil with the basil. Season with salt, pepper and a pinch of sugar if necessary.
Arrangement
Mix the lettuce leaves with cherry tomatoes, cucumber and dressing, then arrange them on plates. Scatter the Bergader Edelpilz on top, put the crispy slices of bread in with them and garnish with basil leaves.
Tip
The salad can be varied with 150g of freshly fried mushrooms, or 8 quartered slices of Parma ham fried in oil until crispy. The salad can be further refined with capers and olives according to preference. The small cabbage lettuce offered in the supermarket is very suitable as cabbage lettuce hearts for this dish. One then needs 2 or 3 pieces of them.
